Behind the bar there’s a story to tell
Karen’s 3 Soles bar boss and his built letter isn’t a generic list of classic drinks with a pretty name. With passion, precision and a profound knowledge of local and Latin American ingredients, she developed a unique letter of copyright and modern reinterpretations of classics, designed to harmonise with the restaurant’s fusion cuisine. As they say from their own bar, “every sip also tells a story.”
That’s what we can figure out from the name of his letter: Chilcano, Blue Honey, Fire of the Soul, Silver Sun Mune, Sun of Midnight, Gin Tónica de Lulo, Fisco Sour Fairy Red, Xue, Mojito Fairy Red and Mojito Fairy Yellow. They are not translations of international cocktails with a beautiful name attached to them: they are their own creations, most with promotion 2×1, ranging from $34,500 (Mid-Night Sun or Silver Sun Mune) to $46,000 (the Lulo’s Gin Tónica, the most advanced of them).
What’s a pint for a cocktail
The difference between a generic bar and a handmade cocktail lies in the details: the use of local fresh fruit rather than industrial syrups, the proper production of some ingredients, and the intention that each drink have a reason to be beyond “selling something with alcohol.”
The letter of 3 Soles looks clear at the Gin Tónica de Lulo, replacing the expected citrus from any Gin Tónica with a particular Colombian fruit of acidity. It looks also at pisco sour of the house ($36,800, 2×1), which as well as the classic version has its variant with Red Fairy and in the Chilean ($38,600, 2×1), the other face of the pisco: lighter, served with high glass with ginger ale. Both are a direct wink to the Peruvian cocktail industry, the same tradition that holds up a good share of the bar’s identity.
The other half of the letter: the classics with their own touch
Not everything at the bar is an autograph. The list of classics is far more extensive: pineapple ($42,000), margarita ($34,000), scotch sour ($40,300, 2×1), espresso martini ($34,500, 2×1), gin and tonic ($40,300), pineapple and pineapple with 3 versions (classic, red and yellow fruit, all about 2×1) and even nonalcohol options such as motito without alcohol ($32,200, 2×1) or pineapple without liquor ($28,800), for those with simply been thought or simply to be moved out of their plan.
Also there are pitcher sangria (white $102,400, ink $120,000) for large groups, and a hot wine ($34,000) that at cold nights of Chia makes quite a few sense to ask.

The role of local ingredients
Using ingredients such as lulo, camu camu or Amazon fruit at the cooking industry isn’t just a decision to taste: it’s also a way to connect the bar with the name of the three kitchens represented by the restaurant. A lulo gin would be impossible at a traditional European or American bar simply because the lulo isn’t available there. That geographical limitation became 3 Soles an advantage: cocktails can only be made as such at a place as this.
For those who prefer to have no alcohol
Not all of the bar’s creativity depends on liquor. The pits ($16,000) and the baker ($16,000) are examples of how that same local ingredient philosophy translates into something without alcohol, with the same level of care as any letter’s author cocktail. And if you look for something with more presentation than a regular but alcohol-free juice, there come Gassatas ($13,800), served with a cup with as thematic names as Inca Fire or Itixir of the Andes.
The promotion that makes it more worth it
Most of the copyright and most of the classics come with 2×1 promotion, making the bar a plan apart from lunch or dinner. It’s common to see groups that come only through cocktails, especially at weekends when there’s live music and the coffee-bar atmosphere completely changes with respect to a lunch every week.
