In September 2026, Restaurante Fusión Los 3 Soles was one of the 12 venues representing the food of Bogotá and the surrounding region of Cundinamarca at the Gastrofest Festival, held inside the Feria del Hogar, a long-running home and lifestyle show.

We didn’t get there just by filling out a form. It took a months-long process with one-on-one mentoring, an outside curation team and a cooking contest judged by industry experts. Here’s what Gastrofest is, how its selection works and what it meant for us to make the final cut.

What Gastrofest is and who runs it

Gastrofest is the food festival of Bogotá and Cundinamarca. It’s organized by the Bogotá Chamber of Commerce (Cámara de Comercio de Bogotá, or CCB) through its food industry cluster, with a clear goal: help the region’s food businesses grow, stand out and get in front of more diners.

In 2026 the festival held its fifth edition, from September 3 to 20. It brought together 77 selected venues, from restaurants and cafés to bakeries, pastry shops, chocolate makers and craft breweries. Many of them were part of the three Gastrofest Territories, food routes the public explored throughout September: Centro-Sur and Norte in Bogotá, and Sabana Centro, the area just north of the city where Chía sits.

It wasn’t our first time, either. Los 3 Soles also took part in Gastrofest 2025, which made 2026 our second year in a row at the festival.

How the Gastrofest 2026 selection works

What makes Gastrofest worth talking about is the filter. Applying isn’t enough: every stage leaves fewer venues standing than the one before. Here’s how it played out in 2026:

  1. Applications. By April 30, 321 food businesses from Bogotá and Cundinamarca had applied.
  2. Business mentoring. 210 were shortlisted for one-on-one coaching from the Bogotá Chamber of Commerce, focused on their value proposition, the story behind their signature dish and how to stand out in the market.
  3. Curation and visibility. An outside curation team picked 77 venues for the official directory and the festival’s food routes.
  4. Cooking contest. In August, 21 venues competed in front of a curation team and seven judges with backgrounds in food, tourism, innovation and the food industry. According to press coverage, entries were judged on the food itself, innovation and sustainable practices.
  5. Feria del Hogar. Out of those 21 contestants, only 12 were selected for the Gastrofest Festival inside the Feria del Hogar.

The list published in the press is a mix of cafés, pastry shops, chef-driven kitchens and international concepts. It included Kuana Café, Sabor Nacional, Jojoto Ancestral, Triü Raclette, Izakayaq Sushi, Casa Duquesa Pastelería and Santos, Brujas y Alquimistas, along with Restaurante Fusión 3 Soles, the name our listing carried at the festival.

Sharing that space with such different businesses is part of what makes the festival fun. Each one brings its own take on the food of Bogotá and the region.

What we brought to the Feria del Hogar

For 18 days, from September 3 to 20, the second floor of Pavilion 1 at Corferias hosted the 12 Gastrofest stands. Visitors to the Feria del Hogar could sample a bit of each concept there.

Ours was what we cook every day in Chía: a kitchen that puts Colombia, Mexico and Peru at the same table. It’s food built on technique and regional ingredients like goldenberry, banana passionfruit, lulo (a tart, citrusy Colombian fruit) and papa criolla, a small, buttery golden Andean potato. It’s made for sharing, with no unnecessary fuss.

Taking that countryside cooking to a pavilion in the middle of the city was a different challenge from our restaurant, with a different pace and a different crowd. Behind it is our kitchen and bar team, led by executive chef Anthony Mora and head chef Luis Miguel Méndez, with Karen Cruz running the signature cocktail bar.

A year of recognition for Los 3 Soles

Gastrofest 2026 didn’t come alone. It’s been a big year for the team:

  • Winners of the 2026 Chía Gastronomic Challenge, a local culinary competition, in the mixology category, with Karen Cruz’s Solanum Andino cocktail.
  • Finalists in the 2026 Chía Gastronomic Challenge, contemporary cuisine category, with Anthony Mora’s Muysquynsuca dish.
  • Selected among the 12 venues at the 2026 Gastrofest Festival at the Feria del Hogar.

Add to that the 2025 Chía Gastronomic Challenge, which we won in contemporary cuisine, and a spot in the final of the 2025 Porkcolombia Challenge, a pork cooking competition run by Colombia’s pork producers’ association. Why it matters for Chía and the savanna

A restaurant from the Chía-Cota road taking part in the main event of a festival led by the Bogotá Chamber of Commerce says something about the region. Sabana Centro has a food scene worth the drive, and Gastrofest recognized that this year by making it one of its three territories.

For us, being at Corferias was also an open invitation. For plenty of fair visitors, it may have been the first time they’d heard of a Latin fusion restaurant just a short drive north of Bogotá. Now they know where to find us.
